Coconut Curry Rice

 So I was at the health food store when I ran into a big bulk bin of these guys:

Curry cashews. I sampled one....
 Be still, my heart! I love curry, and I love cashews! I simply had to have them.
Now what to put them on/in? A coconut/curry/rice dish came to mind, with the cashews as a garnishment. I went home and got to cooking, and the following recipe is what resulted.

Coconut Curry Rice

1 can coconut milk
1 cup rice
1 cup water
curry-marinated tempeh strips
curry cashews
2 teaspoons curry powder
1 teaspoon salt
1 teaspoon garam masala
1 teaspoon mrs dash's caribbean citrus blend
green beans
asparagus

Remember what I said about not having all ingredients? These were the ingredients I personally added to my rice, but if you have lima beans and brussel sprouts instead of green beans and asparagus, go for it. I also never used to own "garam masala", FYI it is just a combination of spices in one jar (its cloves, cardamon, cumin and cinnamon mixed together, that's all) and I also never used to use Mrs Dash. So use what you have. If you don't have it, don't make a special trip to the grocery store. (But also don't blame me if it doesn't come out right because you didn't follow the recipe) hehehe

 Put rice, one cup of water and one cup of the coconut milk in a medium saucepan. The can of coconut milk can will have 2 cups in it. I reserved the other cup for after the rice was done cooking.

When your rice is done cooking it will be like regular rice, but infused with the coconut flavor:


Then I cut up one cup of whatever veggies I wanted (I chose my frozen asparagus and frozen green beans)

And mix in veggies with the last cup of remaining coconut milk:

While in the store, after I saw the cashews and figured out what I was going to make, I stopped by the refrigerated section and picked up some of this. It matched perfectly with my recipe:

Tempeh is a non-processed soy product. The best kind of soy, in my opinion. We have cut out all soy except tempeh. It is high in protein and very tasty. It comes in strips, and you can grill them, heat them up, or eat them cold.  This is the package inside the box:

And it comes out in strips: 

 Simply assemble your tempeh on top of your rice, and your cashews on top of your tempeh:


I realize that a to-go container may not be the best presentation, but I was heading into work, so ce la vie. 


This was pretty darn good. Next time I might amp up the spices, because I like a lot of kick and flavor.
